Ingredients

  • 2 cups Basmati rice
  • 3 cups Mixed vegetables (carrots, peas, beans, cauliflower)
  • 1 large Onion
  • 2 tbsp Ginger-garlic paste
  • 2 Green chilies
  • 0.25 cup Mint leaves
  • 0.25 cup Cilantro leaves
  • 3 tbsp Ghee (clarified butter)
  • 2 tbsp Biryani masala
  • 1 tsp Turmeric powder
  • 1 tsp Salt
  • 0.25 tsp Saffron strands
  • 2 tbsp Warm milk

Instructions

  1. 1Soak basmati rice for 30 minutes, then drain.
  2. 2Heat ghee in a large pot. Add sliced onions and sauté until golden brown.
  3. 3Add ginger-garlic paste and green chilies, sauté for a minute.
  4. 4Add mixed vegetables, biryani masala, turmeric powder, and salt. Cook for 5 minutes.
  5. 5Add soaked rice, mint leaves, and cilantro leaves. Mix well.
  6. 6Add water (double the amount of rice). Bring to a boil, then reduce heat and simmer, covered, until rice is cooked through (about 20 minutes).
  7. 7Soak saffron strands in warm milk. Drizzle over the biryani.
  8. 8Let it rest for 10 minutes before serving.
