Vegan Zürcher Geschnetzeltes with Rösti

A vegan version of the classic Swiss dish, featuring sliced seitan in a creamy mushroom and white wine sauce, served with crispy potato rösti.

Ingredients

  • 1 lb Seitan, thinly sliced
  • 1 lb Mushrooms, sliced
  • 1 medium Onion, chopped
  • 2 tbsp Vegan butter
  • 1/2 cup Dry white wine, vegan
  • 1 cup Vegetable broth
  • 1/2 cup Vegan cream
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 4 medium Potatoes, shredded

Instructions

  1. 1Prepare the rösti: Place the 4 medium potatoes in a bowl and shred them using a box grater. Squeeze out as much excess moisture as possible by hand or using a clean kitchen towel. Divide the shredded potato into 4 equal portions and shape each portion into a flat patty, about 1/2-inch thick.
  2. 2Cook the rösti: Heat a large skillet over medium-high heat (375°F / 190°C). Add the potato patties to the hot skillet and cook for 5-7 minutes per side, until golden brown and crispy. Remove the rösti from the skillet and place them on a plate lined with paper towels to drain. Keep them warm while you prepare the rest of the dish.
  3. 3Sauté the aromatics and mushrooms: In the same skillet, melt the 2 tbsp vegan butter over medium heat (300°F / 150°C). Add the 1 medium onion, chopped, and cook for 5-7 minutes, stirring occasionally, until softened and translucent. Add the 1 lb mushrooms, sliced, and cook for another 8-10 minutes, stirring occasionally, until they have released their liquid and are nicely browned.
  4. 4Add the seitan and deglaze: Add the 1 lb seitan, thinly sliced, to the skillet with the onions and mushrooms. Cook for 2-3 minutes, stirring gently, until the seitan is heated through. Pour in the 1/2 cup dry white wine, vegan, and scrape the bottom of the pan to loosen any browned bits. Let the wine bubble and reduce for 2-3 minutes until it has mostly evaporated.
  5. 5Create the sauce: Pour in the 1 cup vegetable broth and the 1/2 cup vegan cream. Stir in the 1 tbsp lemon juice, 2 tbsp fresh parsley, chopped, 1 tsp salt, and 1/2 tsp black pepper. Bring the mixture to a gentle simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
  6. 6Serve: Spoon the vegan Zürcher Geschnetzeltes mixture over the prepared rösti patties.
