Vegan Tofu Scramble Adobo with Garlic Rice

Ingredients

  • 1 block (14 oz) Extra-firm tofu
  • 3 tablespoons Soy sauce
  • 2 tablespoons White vinegar
  • 1 tablespoon Brown sugar
  • 2 leaves Bay leaves
  • 1 teaspoon Black peppercorns
  • 4 cloves Garlic
  • 1/2 medium Onion
  • 2 tablespoons Vegetable oil
  • 4 cups Cooked rice
  • 2 tablespoons Minced garlic

Instructions

  1. 1Press tofu to remove excess water. Crumble into small pieces.
  2. 2In a bowl, whisk together soy sauce, vinegar, brown sugar, bay leaves, and peppercorns.
  3. 3Heat vegetable oil in a large skillet over medium heat. Sauté garlic and onion until fragrant.
  4. 4Add crumbled tofu to the skillet and cook for 5-7 minutes, stirring occasionally.
  5. 5Pour the adobo sauce mixture over the tofu and simmer for 10-15 minutes, or until the sauce has thickened.
  6. 6While the tofu is simmering, prepare the garlic rice. Heat a separate pan and add some oil, toast the minced garlic until golden brown and crispy. Add cooked rice and stir well, cooking for 3-5 minutes until heated through.
  7. 7Serve the tofu scramble adobo with garlic rice.
