Ingredients

  • 2 cups Fresh Corn Kernels
  • 1/2 cup Rice Flour
  • 1/4 cup Tapioca Starch
  • 1 tablespoon Red Curry Paste
  • 1/4 cup Coconut Milk
  • 2 tablespoons Chopped Cilantro
  • 2 leaves Lime Leaves
  • 1/4 teaspoon Salt
  • 1 cup Oil (for frying)
  • 1 small Red Chili
  • 2 cloves Garlic
  • 2 tablespoons Rice Vinegar
  • 3 tablespoons Sugar
  • 2 tablespoons Water

Instructions

  1. 1In a large bowl, combine corn kernels, rice flour, tapioca starch, red curry paste, coconut milk, cilantro, lime leaves, and salt. Mix well.
  2. 2Heat oil in a large skillet over medium heat.
  3. 3Drop spoonfuls of the corn mixture into the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
  4. 4Remove fritters from the skillet and place on a paper towel-lined plate to drain excess oil.
  5. 5To make the sweet chili sauce, mince red chili and garlic. Combine with rice vinegar, sugar, and water in a small saucepan.
  6. 6Bring to a simmer over medium heat and cook for 5 minutes, or until slightly thickened.
  7. 7Serve corn fritters hot with sweet chili sauce.
