Vegan Taiwanese Sticky Rice (You Fan)

A savory and satisfying vegan version of Taiwanese Sticky Rice, perfect as a hearty lunch. This dish features glutinous rice, mushrooms, and other flavorful ingredients.

Ingredients

  • 2 cups Glutinous rice
  • 8 Dried shiitake mushrooms
  • 2 tbsp Vegetable oil
  • 2 Shallots
  • 3 cloves Garlic
  • 4 tbsp Coconut aminos
  • 2 tbsp Rice wine
  • 1 tsp Vegan sugar
  • 1/4 tsp White pepper
  • 2 tbsp Dried shrimp substitute (seaweed flakes)
  • 1 1/2 cups Water

Instructions

  1. 1Soak glutinous rice in water for at least 4 hours, or overnight. Drain.
  2. 2Soak dried shiitake mushrooms in warm water for 30 minutes. Drain and slice.
  3. 3Heat vegetable oil in a wok or large pan over medium heat.
  4. 4Add shallots and garlic and sauté until fragrant.
  5. 5Add shiitake mushrooms and stir-fry for 5 minutes.
  6. 6Add drained glutinous rice and stir-fry for 2 minutes.
  7. 7Stir in coconut aminos, rice wine, vegan sugar, white pepper, and dried shrimp substitute.
  8. 8Add water and bring to a simmer. Cover and cook for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed.
  9. 9Fluff with a fork before serving.
