Vegan Taiwanese Danzai Noodles (Dry Version)

A vegan and simplified version of Danzai noodles, served dry with a savory minced mushroom topping. A satisfying and umami-rich lunch option.

Ingredients

  • 1/2 cup Dried Shiitake Mushrooms
  • 8 oz Vegan Ground Meat
  • 8 oz Noodles
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Dark Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sesame Oil
  • 2 cloves Garlic
  • 1 tablespoon Vegetable Oil
  • 1 teaspoon Chili Oil
  • 2 tablespoons Cilantro

Instructions

  1. 1Place the 1/2 cup of Dried Shiitake Mushrooms in a heatproof bowl. Pour 2 cups (475 ml) of very hot water (about 180°F / 82°C) over them and let them soak for 30 minutes, or until they are soft and pliable. Drain the mushrooms, discard the stems, and finely chop the caps into 1/4-inch (0.6 cm) pieces.
  2. 2Heat the 1 tablespoon of Vegetable Oil in a 10-inch (25 cm) skillet over medium heat (approximately 325°F / 163°C surface temperature). Add the 2 cloves of finely minced Garlic and sauté for 30 seconds, stirring constantly, until the garlic becomes fragrant and lightly golden.
  3. 3Add the 8 oz of Vegan Ground Meat and the finely chopped shiitake mushrooms to the skillet. Cook for 5-7 minutes over medium heat, breaking up the meat with a spoon, until the vegan ground meat is browned and crumbly.
  4. 4Stir in the 2 tablespoons of Soy Sauce and the 1 teaspoon of Dark Soy Sauce. Continue to cook for 2-3 minutes, stirring occasionally, until the sauce has slightly thickened and coats the mushroom mixture.
  5. 5While the mushroom mixture cooks, fill a large (6-quart / 5.7 liter) pot with 4 quarts (3.8 liters) of water. Bring the water to a rolling boil over high heat (212°F / 100°C). Add the 8 oz of Noodles and cook for 4-6 minutes, or until the noodles are tender but still firm to the bite; drain the noodles thoroughly in a colander.
  6. 6Divide the cooked and drained noodles evenly among four serving bowls. Top each bowl with an equal portion of the minced mushroom mixture. Drizzle each serving with 1 tablespoon of Rice Vinegar, 1 teaspoon of Sesame Oil, and 1 teaspoon of Chili Oil.
  7. 7Finely chop the 2 tablespoons of Cilantro into 1/4-inch (0.6 cm) pieces. Garnish each bowl with the chopped cilantro and serve immediately.
