Ingredients

  • 1 lb Firm Tofu (soy-free)
  • 1 cup Vegetable Broth
  • 4 Dried Shiitake Mushrooms
  • 1 inch Ginger
  • 3 cloves Garlic
  • 2 tbsp Gluten-Free Tamari
  • 1 tbsp Rice Vinegar
  • 1 tsp Brown Sugar
  • 1 tsp Sesame Oil
  • 2 Green Onions

Instructions

  1. 1Press the soy-free firm tofu to remove excess water. Cut into cubes.
  2. 2Soak dried shiitake mushrooms in hot water for 30 minutes. Remove stems and slice thinly.
  3. 3Heat sesame oil in a pan over medium heat.
  4. 4Add ginger and garlic, sauté until fragrant.
  5. 5Add tofu and brown on all sides.
  6. 6Pour in vegetable broth, gluten-free tamari, rice vinegar, and brown sugar.
  7. 7Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the sauce has thickened.
  8. 8Garnish with green onions before serving.
