Vegan Sweet and Sour 'Pork' with Pineapple

Ingredients

  • 1 lb Seitan or Firm Tofu
  • 1 cup Pineapple Chunks
  • 1 Bell Pepper (red)
  • 1/2 Onion
  • 2 tbsp Vegetable Oil
  • 2 tbsp Soy Sauce
  • 3 tbsp Rice Vinegar
  • 3 tbsp Sugar
  • 2 tbsp Ketchup
  • 2 tbsp Cornstarch

Instructions

  1. 1If using the 1 lb of firm tofu, press it for at least 15 minutes to remove excess water, then cut it into 1-inch cubes. If using the 1 lb of seitan, cut it into 1-inch cubes. Place the 1 lb of seitan or firm tofu cubes in a medium bowl and toss them with 2 tbsp of cornstarch until each piece is evenly coated.
  2. 2Heat the 2 tbsp of vegetable oil in a large skillet or wok over medium-high heat until it reaches approximately 400°F (200°C). Add the coated 1 lb of seitan or firm tofu to the hot oil and fry for 5-7 minutes, turning the pieces occasionally, until they are golden brown and slightly crispy on all sides. Carefully remove the seitan or tofu from the skillet and set it aside on a clean plate.
  3. 3Cut the 1/2 onion into 1-inch pieces and the 1 red bell pepper into 1-inch pieces. In the same skillet (no need to clean it), add the cut 1/2 onion and 1 red bell pepper. Stir-fry them over medium-high heat for 3-4 minutes until they are slightly softened but still retain a crisp texture.
  4. 4Add the 1 cup of pineapple chunks to the skillet with the softened vegetables. Stir-fry for 1 minute, just until the pineapple is heated through.
  5. 5In a small bowl, whisk together the 2 tbsp of soy sauce, 3 tbsp of rice vinegar, 3 tbsp of sugar, 2 tbsp of ketchup, and the remaining 2 tbsp of cornstarch. Continue whisking until the cornstarch is fully dissolved and the mixture is smooth.
  6. 6Pour the prepared sauce mixture over the vegetables and pineapple in the skillet. Increase the heat to medium and bring the mixture to a simmer, stirring constantly for 1-2 minutes until the sauce visibly thickens and coats all the ingredients.
  7. 7Return the fried 1 lb of seitan or firm tofu to the skillet with the thickened sauce, vegetables, and pineapple. Stir everything together gently to ensure the seitan or tofu is fully coated with the sauce. Cook for 1 more minute over medium heat to heat the seitan or tofu through. Serve immediately, perhaps over rice.
