Ingredients

  • 1 lb Vegan Ground Beef
  • 0.5 cup Breadcrumbs
  • 0.25 cup Oat Milk
  • 1 medium Yellow Onion
  • 2 cloves Garlic
  • 0.5 tsp Allspice
  • 0.25 tsp Nutmeg
  • 2 tbsp Vegan Butter
  • 2 tbsp All-Purpose Flour
  • 1.5 cups Vegetable Broth
  • 1 tbsp Soy Sauce
  • 0.5 cup Vegan Sour Cream
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1In a large bowl, combine the 1 lb Vegan Ground Beef, 0.5 cup Breadcrumbs, 0.25 cup Oat Milk, 1 medium Yellow Onion (grated), 2 cloves Garlic (minced), 0.5 tsp Allspice, 0.25 tsp Nutmeg, 1 tsp Salt, and 0.5 tsp Black Pepper. Mix everything thoroughly with your hands until well combined.
  2. 2Shape the mixture into small meatballs, about 1-inch in diameter.
  3. 3Heat 1 tbsp of the 2 tbsp Vegan Butter in a large skillet over medium-high heat, approximately 400°F (200°C).
  4. 4Carefully place the meatballs into the hot skillet, ensuring not to overcrowd the pan. Brown the meatballs on all sides, which should take about 5-7 minutes. Once browned, remove the meatballs from the skillet and set them aside on a plate.
  5. 5Add the remaining 1 tbsp Vegan Butter to the same skillet and melt it over medium heat, approximately 350°F (175°C). Whisk in the 2 tbsp All-Purpose Flour and cook for 1 minute, stirring constantly, to form a roux. This will smell slightly nutty.
  6. 6Gradually whisk in the 1.5 cups Vegetable Broth, a little at a time, ensuring no lumps form. Then, whisk in the 1 tbsp Soy Sauce. Bring the mixture to a simmer, stirring constantly, until the gravy thickens to a consistency that coats the back of a spoon, about 3-5 minutes.
  7. 7Reduce the heat to low, approximately 200°F (95°C). Stir in the 0.5 cup Vegan Sour Cream until smooth. Taste the gravy and add more salt and pepper if needed.
  8. 8Return the browned meatballs to the skillet with the thickened gravy. Let them simmer gently in the gravy for 10 minutes, or until heated through. The meatballs should be firm to the touch.
