Ingredients

  • 1.5 kg Potatoes
  • 500 g Kale
  • 3 medium Carrots
  • 1 large Onion
  • 2 tsp Smoked Paprika
  • 400 g Plant-Based Smoked Sausage
  • 1/2 cup Vegetable Broth
  • 2 tbsp Dairy-Free Butter
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Peel and chop the potatoes, carrots, and onion.
  2. 2Place the potatoes and carrots in a large pot, cover with water, and bring to a boil. Cook until tender, about 20 minutes.
  3. 3While the potatoes and carrots are cooking, sauté the chopped onion in a separate pan with dairy-free butter until softened.
  4. 4Add the chopped kale to the pot with the potatoes and carrots during the last 5 minutes of cooking. Steam until kale is wilted.
  5. 5Drain the potatoes, carrots, and kale. Return them to the pot.
  6. 6Mash the vegetables together with the vegetable broth, dairy-free butter, smoked paprika, salt, and pepper until smooth.
  7. 7Cook plant-based sausage per package instructions.
  8. 8Serve the stamppot topped with slices of the smoked plant-based sausage.
