Vegan Stamppot with Caramelized Onions and Apple

A comforting vegan version of stamppot, a traditional Dutch mashed potato dish. This recipe features a hearty combination of potatoes, kale, and caramelized onions, topped with sweet and tangy apple.

Ingredients

  • 1 kg Potatoes
  • 500 g Kale
  • 2 large Onions
  • 1 large Apple
  • 3 tbsp Vegan Butter
  • 1/4 cup Vegetable Broth
  • 1 tbsp Brown Sugar
  • 1 tsp Balsamic Vinegar

Instructions

  1. 1Peel and chop the potatoes into evenly sized pieces. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
  2. 2While the potatoes are cooking, wash and chop the kale. Steam or blanch the kale until tender, about 5-7 minutes.
  3. 3Thinly slice the onions. In a large pan, melt vegan butter over medium heat. Add the onions and cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes. Add brown sugar and balsamic vinegar during the last 5 minutes.
  4. 4Peel, core, and dice the apple. Set aside.
  5. 5Once the potatoes are cooked, drain the water and mash them with vegan butter and vegetable broth until smooth.
  6. 6Fold in the steamed kale and caramelized onions into the mashed potatoes.
  7. 7Top the stamppot with diced apple before serving.
  8. 8Serve hot as a comforting main dish.
