Vegan Spanakopita Triangles (Spinach Pie)

Ingredients

  • 1 package Phyllo dough
  • 10 oz Frozen spinach
  • 8 oz Vegan feta cheese
  • 0.5 cup Red onion
  • 0.25 cup Fresh dill
  • 0.5 cup Olive oil
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Thaw spinach and squeeze out excess water. Chop finely.
  3. 3In a large bowl, combine spinach, vegan feta, diced red onion, chopped dill, lemon juice, salt, and pepper.
  4. 4Brush a baking sheet with olive oil.
  5. 5Lay one sheet of phyllo dough on the baking sheet and brush with olive oil. Repeat with two more sheets.
  6. 6Place a spoonful of the spinach mixture at one corner of the phyllo stack.
  7. 7Fold the corner over to create a triangle. Continue folding the triangle along the strip of phyllo until you reach the end.
  8. 8Brush the top of the triangle with olive oil.
  9. 9Repeat with remaining phyllo dough and spinach mixture.
  10. 10Bake for 30-35 minutes, or until golden brown and crispy.
  11. 11Let cool slightly before serving.
