Ingredients

  • 1 package Phyllo Dough
  • 10 oz Fresh Spinach
  • 1 cup Cashews
  • 2 tbsp Lemon Juice
  • 2 tbsp Nutritional Yeast
  • 2 cloves Garlic
  • 1/4 cup Fresh Dill
  • 1/4 cup Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Place the 1 cup of cashews in a bowl and cover them with hot water. Let them soak for 15 minutes. After soaking, drain the cashews. Put the drained cashews into a blender with the 2 tablespoons of lemon juice, 2 tablespoons of nutritional yeast, 2 cloves of garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Blend until the mixture is smooth and creamy.
  3. 3Place the 10 oz of fresh spinach in a skillet over medium heat. Cook for 3-5 minutes, stirring occasionally, until the spinach has wilted. Drain any excess liquid from the spinach very well. You can press it gently with a spoon to remove more water.
  4. 4In a bowl, combine the wilted spinach with the creamy cashew mixture you made earlier. Add the 1/4 cup of fresh dill to this bowl and mix everything together thoroughly.
  5. 5Carefully unroll the 1 package of phyllo dough. Lay one sheet of phyllo dough flat. Brush the entire surface of this sheet with some of the 1/4 cup of olive oil. Place another sheet of phyllo dough on top of the oiled sheet and brush it with olive oil. Repeat this process one more time so you have a stack of 3 phyllo sheets, all brushed with olive oil.
  6. 6Cut the stack of 3 phyllo sheets lengthwise into strips that are about 1.5 inches wide. Place about 1 tablespoon of the spinach and cashew mixture at the end of each strip. Fold the strip over the filling to create a triangle shape. Continue folding the strip back and forth along its length to form a triangle. Repeat this process with the remaining phyllo dough and spinach mixture.
  7. 7Arrange the phyllo triangles on a baking sheet. Brush the tops of the triangles generously with the remaining olive oil. Bake in the preheated oven at 375°F (190°C) for 18-20 minutes, or until the phyllo triangles are golden brown and crispy.
