Ingredients

  • 1 lb Frozen Spinach
  • 8 oz Vegan Feta Cheese
  • 1 package Phyllo Dough
  • 1/2 cup Olive Oil
  • 1/4 cup Fresh Dill
  • 1/4 cup Fresh Mint
  • 2 tablespoons Lemon Juice
  • 2 cloves Garlic
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Thaw spinach and squeeze out excess water.
  3. 3In a bowl, combine spinach, vegan feta, dill, mint, lemon juice, garlic, salt, and pepper.
  4. 4Brush phyllo dough with olive oil. Layer several sheets of phyllo, then cut into strips.
  5. 5Place a spoonful of filling at the end of each strip and fold into triangles.
  6. 6Brush the triangles with olive oil and bake for 20-25 minutes, or until golden brown.
