Vegan Souvlaki with Jackfruit

Ingredients

  • 20 oz Young Green Jackfruit (in brine)
  • 1/4 cup Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 medium Cucumber
  • 1 cup Dairy-Free Yogurt (coconut or cashew)
  • 2 tbsp Fresh Dill
  • 1 clove Garlic

Instructions

  1. 1Drain the 20 oz Young Green Jackfruit (in brine) from its can and rinse it thoroughly under cold running water. Place the rinsed jackfruit on a clean kitchen towel or paper towels and press firmly to remove as much excess water as possible, then use your fingers to shred it into small, pull-apart pieces.
  2. 2In a medium-sized mixing bowl, combine the 1/4 cup Olive Oil, 2 tbsp Lemon Juice, 1 tsp Dried Oregano, 1 tsp Garlic Powder, 1 tsp Onion Powder, 1/2 tsp Salt, and 1/4 tsp Black Pepper, whisking them until well combined. Add the shredded jackfruit to the bowl and toss thoroughly until every piece is evenly coated with the marinade; cover the bowl and let it marinate at room temperature for at least 30 minutes.
  3. 3For the tzatziki sauce, grate the 1/2 medium Cucumber using a box grater or food processor, then place the grated cucumber in a clean kitchen towel or paper towels and squeeze out as much excess water as possible. Mince the 1 clove Garlic very finely, and then in a separate medium-sized bowl, combine the 1 cup Dairy-Free Yogurt (coconut or cashew), the squeezed grated cucumber, the 2 tbsp Fresh Dill (finely chopped), and the minced 1 clove Garlic, stirring until well mixed.
  4. 4After the jackfruit has marinated, carefully thread the marinated jackfruit pieces onto skewers, ensuring they are packed relatively tightly but not overly compressed.
  5. 5Preheat your grill to medium heat (approximately 350-375°F / 175-190°C), then place the jackfruit skewers on the preheated grill. Grill for 10-15 minutes, turning the skewers occasionally every 3-4 minutes, until the jackfruit is lightly browned and heated through, with some crispy edges.
  6. 6Carefully remove the grilled jackfruit souvlaki skewers from the grill and serve them immediately with the prepared dairy-free tzatziki sauce on the side.
