Ingredients

  • 1.5 cups Cooked Lentils
  • 1 cup Cooked Rice
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1/2 cup Breadcrumbs (GF)
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Cumin
  • 2 tablespoons Olive Oil
  • 28 oz Crushed Tomatoes
  • 1/2 cup Vegetable Broth

Instructions

  1. 1Sauté onion and garlic in olive oil until softened.
  2. 2In a large bowl, combine lentils, rice, sautéed onion and garlic, gluten-free breadcrumbs, oregano, and cumin. Mix well.
  3. 3Shape the mixture into oblong meatballs.
  4. 4In a saucepan, combine crushed tomatoes and vegetable broth. Bring to a simmer.
  5. 5Gently place the meatballs into the sauce. Cover and simmer for 25-30 minutes, or until heated through and the sauce has thickened.
  6. 6Serve warm with a side of rice or potatoes.
