Vegan Sopa de Cação (Dogfish Soup)

A flavorful and hearty vegan adaptation of the traditional Portuguese Dogfish Soup, using hearts of palm to mimic the texture of the fish. The soup is packed with garlic, cilantro, and plenty of flavor.

Ingredients

  • 2 cans Hearts of Palm
  • 6 cups Vegetable Broth
  • 6 cloves Garlic
  • 1/2 cup Cilantro
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Drain and rinse the hearts of palm. Slice them into thin rounds to resemble coins.
  2. 2Mince the garlic and chop the cilantro.
  3. 3Heat the olive oil in a large pot over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  4. 4Add the vegetable broth, hearts of palm, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes to allow the flavors to meld.
  5. 5Stir in the cilantro and lemon juice. Simmer for another 5 minutes.
  6. 6Serve hot, garnished with extra cilantro if desired.
