Vegan Sopa da Pedra (Stone Soup)

Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion
  • 4 cloves Garlic
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 cup Red Beans
  • 8 cups Vegetable Broth
  • 0.5 head Cabbage
  • 1 leaf Bay Leaf
  • 1 tsp Smoked Paprika
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion and garlic and cook until softened, about 5 minutes.
  3. 3Add potatoes, carrots, and red beans. Cook for 5 minutes more.
  4. 4Pour in vegetable broth, add cabbage and bay leaf. Bring to a boil, then reduce heat and simmer for 45 minutes, or until vegetables are tender.
  5. 5Season with smoked paprika, salt, and pepper to taste. Remove bay leaf before serving.
