Ingredients

  • 4 cutlets Seitan cutlets
  • 1/2 cup All-purpose flour
  • 1 cup Breadcrumbs
  • 1/2 cup Plant milk (unsweetened)
  • 3 tablespoons Vegan butter
  • 1 lb Mushrooms, sliced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Vegetable broth
  • 2 tablespoons Cornstarch
  • 1/4 cup Water
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. 1Place the 1/2 cup all-purpose flour in a shallow dish. Place the 1 cup breadcrumbs in another shallow dish. Pour the 1/2 cup plant milk into a third shallow dish. Dip each of the 4 seitan cutlets first into the 1/2 cup all-purpose flour, then into the 1/2 cup plant milk, and finally coat thoroughly with the 1 cup breadcrumbs. Set the coated cutlets aside.
  2. 2Heat 1/4 inch of vegetable oil in a large 12-inch skillet over medium-high heat, about 400°F (200°C). Carefully place the 4 coated seitan cutlets into the hot oil. Fry for 3-4 minutes on each side, until they are golden brown and crispy. Remove the schnitzel from the skillet and place them on a plate lined with paper towels to drain. Set aside.
  3. 3In the same 12-inch skillet, melt the 3 tablespoons vegan butter over medium heat, about 300°F (150°C). Add the 1 lb sliced mushrooms, 1 medium chopped onion, and 2 cloves minced garlic to the skillet. Cook, stirring occasionally, for 8-10 minutes, until the mushrooms have softened and are nicely browned, and the onion is translucent.
  4. 4Pour the 1 cup vegetable broth into the skillet with the mushrooms and onions. Increase the heat to medium-high and bring the mixture to a gentle simmer. Let it simmer for 2 minutes.
  5. 5In a small bowl, whisk together the 2 tablespoons cornstarch and 1/4 cup water until smooth, creating a slurry. Slowly pour this slurry into the simmering mushroom mixture in the skillet, whisking constantly. Continue to simmer and stir for 1-2 minutes, until the gravy has thickened to your desired consistency.
  6. 6Season the mushroom gravy with the 1 teaspoon salt and 1/2 teaspoon black pepper. Stir well to combine.
  7. 7Serve the 4 crispy vegan schnitzel immediately with the hot mushroom gravy spooned over the top.
