Ingredients

  • 1 package Vegan puff pastry
  • 2 cups Sauerkraut, rinsed and drained
  • 2 medium Apples, peeled and diced
  • 1 medium Onion, chopped
  • 2 tablespoons Olive oil
  • 2 tablespoons Brown sugar
  • 1 teaspoon Caraway seeds
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons Vegan butter, melted (for brushing)

Instructions

  1. 1Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. 2In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened.
  3. 3Add the sauerkraut and apples to the skillet and cook for 5-7 minutes, stirring occasionally.
  4. 4Stir in the brown sugar, caraway seeds, salt, and pepper. Cook for another 2-3 minutes.
  5. 5On a lightly floured surface, unfold the vegan puff pastry.
  6. 6Spread the sauerkraut mixture evenly over the puff pastry, leaving a 1-inch border.
  7. 7Roll up the puff pastry tightly, starting from one end. Place the strudel seam-side down on the prepared baking sheet.
  8. 8Brush the top of the strudel with melted vegan butter.
  9. 9Bake for 35-40 minutes, or until golden brown.
  10. 10Let cool slightly before slicing and serving.
