Ingredients

  • 1 lb Plant-based ground meat
  • 1/2 cup Mashed potatoes
  • 1/4 cup Coconut milk
  • 2 stalks Lemongrass
  • 1 inch Galangal
  • 1 inch Ginger
  • 4 cloves Garlic
  • 3 number Shallots
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 3 number Kaffir lime leaves
  • 1 tablespoon Coconut sugar
  • 1/2 teaspoon Salt
  • 8 number Bamboo skewers

Instructions

  1. 1Finely chop lemongrass, galangal, and ginger. Mince garlic and shallots.
  2. 2In a food processor, combine lemongrass, galangal, ginger, garlic, shallots, turmeric powder, coriander powder, cumin powder, kaffir lime leaves, coconut sugar, and salt. Blend into a smooth paste.
  3. 3In a bowl, mix the plant-based ground meat, mashed potatoes, coconut milk, and spice paste until well combined.
  4. 4Wrap the mixture around bamboo skewers, pressing firmly to secure.
  5. 5Grill over medium heat for 5-7 minutes per side, or until cooked through and slightly charred.
  6. 6Serve hot with rice and peanut-free dipping sauce.
