Vegan Russian Sauerkraut Soup (Shchi)

Ingredients

  • 1 lb Sauerkraut
  • 3 medium Potatoes
  • 1 medium Carrot
  • 1 medium Onion
  • 6 cups Vegetable broth
  • 2 tablespoons Tomato paste
  • 2 tablespoons Sunflower oil
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh dill

Instructions

  1. 1Rinse the sauerkraut if it's too sour. Chop potatoes, carrots and onion.
  2. 2Heat sunflower oil in a large pot. Sauté onion and carrot until softened. Add tomato paste and cook for 2 minutes.
  3. 3Add sauerkraut, potatoes, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 40 minutes, or until potatoes are tender.
  4. 4Remove bay leaf. Stir in fresh dill before serving.
