Ingredients

  • 2 lbs Potatoes
  • 1/2 medium Onion
  • 1/4 cup All-purpose flour
  • 1 tablespoon Potato starch
  • 1/4 cup Sunflower oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Vegan Sour Cream

Instructions

  1. 1Grate the potatoes and onion using a box grater. Place in a colander and squeeze out as much liquid as possible.
  2. 2In a bowl, combine grated potatoes and onion, flour, potato starch, salt, and pepper. Mix well.
  3. 3Heat sunflower oil in a large skillet over medium heat.
  4. 4Drop spoonfuls of the potato mixture into the hot oil and flatten slightly. Cook for 3-4 minutes per side, or until golden brown and crispy.
  5. 5Serve hot with vegan sour cream.
