Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 cup Plant-based milk (oat or almond)
  • 1 teaspoon Apple cider vinegar
  • 2 tablespoons Vegetable oil
  • 8 oz Mushrooms, sliced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh dill, chopped

Instructions

  1. 1In a large bowl, combine the 1 cup all-purpose flour, 1 teaspoon baking powder, 0.25 teaspoon salt, and 1 teaspoon sugar. Whisk these dry ingredients together until they are well combined.
  2. 2In a separate medium bowl, combine the 1 cup plant-based milk and 1 teaspoon apple cider vinegar. Let this mixture sit undisturbed for 5 minutes; it will curdle slightly.
  3. 3Pour the curdled plant-based milk mixture into the large bowl with the dry ingredients. Add the 2 tablespoons vegetable oil. Stir gently with a whisk or spoon until the ingredients are just combined into a batter, being careful not to overmix; a few small lumps are acceptable.
  4. 4Heat a non-stick griddle or a large frying pan over medium heat, to approximately 350°F (175°C). Lightly oil the surface of the pan. For each blini, pour approximately 1/4 cup of batter onto the hot griddle. Cook each blini for 2 to 3 minutes per side, until it is golden brown, cooked through, puffy, and shows small bubbles on its surface.
  5. 5In a 10-inch skillet, heat 2 tablespoons vegetable oil over medium heat, to approximately 350°F (175°C). Add the 1 medium onion, diced, and the 2 cloves garlic, minced, to the hot oil. Sauté for about 5 minutes, stirring occasionally, until the onion is softened and translucent.
  6. 6Add the 8 oz mushrooms, sliced, to the skillet with the onion and garlic. Cook for about 8 minutes, stirring occasionally, until the mushrooms have released their liquid and started to brown. Stir in the 2 tablespoons fresh dill, chopped, until well mixed.
  7. 7Spoon the mushroom filling onto one half of each cooked blini. Fold the other half of the blini over the filling to create a pocket. Serve the blini immediately.
