Ingredients

  • 2 lbs Carrots, grated
  • 1 medium Onion, diced
  • 1 cup Cooked rice
  • 1/2 cup All-purpose flour
  • 2 tablespoons Fresh dill, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1/2 cup Breadcrumbs (gluten free)
  • 3 tablespoons Vegetable oil

Instructions

  1. 1In a large bowl, combine grated carrots, onion, cooked rice, flour, dill, salt, and pepper.
  2. 2Mix well until all ingredients are combined.
  3. 3Form mixture into small cutlets.
  4. 4Coat each cutlet with breadcrumbs.
  5. 5Heat vegetable oil in a skillet over medium heat.
  6. 6Fry cutlets for 5-7 minutes per side, or until golden brown and crispy.
  7. 7Serve hot with a side of vegan sour cream (sunflower seed based).
