Ingredients

  • 8 cups Vegetable Broth
  • 1 medium Cabbage
  • 2 medium Potatoes
  • 1 large Carrots
  • 1 medium Onion
  • 2 tablespoons Tomato Paste
  • 2 leaves Bay Leaf
  • 1 tablespoon Dried Dill
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion and carrots and sauté until softened, about 5 minutes.
  2. 2Add tomato paste and cook for another minute, stirring constantly.
  3. 3Pour in vegetable broth, add cabbage, potatoes, bay leaf, dill, salt, and pepper.
  4. 4Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until vegetables are tender.
  5. 5Remove bay leaves before serving. Garnish with fresh dill (optional).
