Ingredients

  • 1 cup Buckwheat Groats
  • 8 oz Mushrooms
  • 1 medium Onion
  • 2 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1 tablespoon Soy Sauce
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. 1Rinse the buckwheat groats in a fine-mesh sieve.
  2. 2Heat olive oil in a saucepan over medium heat. Add the chopped onion and sauté until softened.
  3. 3Add the sliced mushrooms and cook until they release their moisture and start to brown.
  4. 4Stir in the buckwheat groats, vegetable broth, and soy sauce. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the buckwheat is cooked and the liquid is absorbed.
