Ingredients

  • 1 cup Buckwheat Groats
  • 2 cups Vegetable Broth
  • 8 oz Mushrooms
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil
  • 1 tablespoon Soy Sauce
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.
  2. 2Add mushrooms and cook until browned, about 7-10 minutes.
  3. 3Stir in buckwheat groats and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, or until liquid is absorbed and buckwheat is tender.
