  • 2 medium Beets
  • 2 medium Potatoes
  • 1 large Carrots
  • 1 medium Onion
  • 6 cups Vegetable Broth
  • 1 14.5 oz can Canned Diced Tomatoes
  • 2 tablespoons White Vinegar
  • 1 teaspoon Sugar
  • 1 Bay Leaf
  • 2 tablespoons Fresh Dill
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 4 tablespoons Vegan Sour Cream

Instructions

  1. 1Peel and chop the beets, potatoes, carrots, and onion.
  2. 2In a large pot, sauté the onion in a little oil until softened.
