Ingredients

  • 1.5 lbs Potatoes
  • 1 large Onion
  • 12 oz Vegan Sausage
  • 1 cup Beets (cooked)
  • 2 tbsp Vegan Butter
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tbsp Vegetable Oil
  • 4 oz Pickled Beetroot
  • 4 optional Vegan Fried Egg

Instructions

  1. 1Dice the potatoes, onion, vegan sausage, and cooked beets into small, uniform pieces.
  2. 2Heat the vegetable oil and vegan butter in a large skillet over medium-high heat.
  3. 3Add the potatoes and onion to the skillet and cook until the potatoes are golden brown and tender, about 10-15 minutes.
  4. 4Add the vegan sausage and beets to the skillet and cook for another 5-7 minutes, until heated through.
  5. 5Season with salt and pepper to taste.
  6. 6Serve hot with pickled beetroot and a vegan fried egg (optional).
