Vegan Potato and Dill Salad (Sałatka Ziemniaczana)

Ingredients

  • 2 pounds Potatoes
  • 1 cup Vegan mayonnaise
  • 0.25 cup Fresh dill
  • 0.5 medium Onion
  • 1 tablespoon Mustard
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Place the 2 pounds of Potatoes in a large heavy-bottomed pot and cover with water. Bring to a boil over high heat, then reduce heat to medium and cook for 15-20 minutes, or until the potatoes are easily pierced with a fork. Drain the potatoes well and let them cool completely, about 30 minutes.
  2. 2Once cooled, cut the 2 pounds of Potatoes into 1/2-inch cubes.
  3. 3Finely chop the 0.5 medium Onion and the 0.25 cup of Fresh dill.
  4. 4In a large bowl, combine the cubed potatoes, 1 cup of Vegan mayonnaise, the chopped 0.25 cup of Fresh dill, the chopped 0.5 medium Onion, 1 tablespoon of Mustard, and 1 tablespoon of Lemon juice.
  5. 5Add the 1 teaspoon of Salt and the 0.5 teaspoon of Black pepper to the bowl. Mix everything together gently until all the potatoes are coated and the ingredients are well combined.
  6. 6Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
