Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 cup Arborio rice
  • 1 28-ounce can Diced tomatoes
  • 1 cup Vegetable broth
  • 1 leaf Bay leaf
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Heat olive oil in a pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. 2Add garlic and cook for another minute.
  3. 3Stir in rice and cook for 1 minute, stirring constantly.
  4. 4Add diced tomatoes, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked and liquid is absorbed.
  5. 5Remove bay leaf before serving. Fluff with a fork.
