Ingredients

  • 2 cups Dried Black Beans
  • 8 cups Water
  • 2 tablespoons Olive Oil
  • 1 large Onion
  • 4 cloves Garlic
  • 2 teaspoons Smoked Paprika
  • 1 teaspoon Dried Oregano
  • 2 leaves Bay Leaf
  • 1 28-ounce can Canned Diced Tomatoes
  • 8 ounces Vegan Chorizo Sausage
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 0.25 cup Fresh Cilantro

Instructions

  1. 1Measure the 2 cups of dried black beans and rinse them thoroughly under cold water. Place the rinsed beans in a large bowl and cover them with plenty of water. Let them soak overnight, or for at least 8 hours. After soaking, drain the beans completely.
  2. 2Place a large, heavy-bottomed pot or Dutch oven on the stove over medium heat (350°F / 175°C). Add the 2 tablespoons of olive oil. Once the oil is shimmering, add the 1 large onion, which has been chopped into small pieces, and cook until it becomes soft and translucent, about 5 minutes.
  3. 3Add the 4 cloves of minced garlic, 2 teaspoons of smoked paprika, and 1 teaspoon of dried oregano to the pot. Stir constantly and cook for 1 minute more, until the garlic is fragrant and the spices have bloomed.
  4. 4Pour in the 1 28-ounce can of diced tomatoes (undrained). Add the 2 cups of drained black beans, 2 bay leaves, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Stir everything together, then add 8 cups of water.
  5. 5Increase the heat to medium-high and bring the stew to a rolling boil. Once boiling, immediately reduce the heat to low, cover the pot tightly with a lid, and let it simmer gently for 1 hour and 30 minutes to 2 hours. The beans should be very tender when pierced with a fork.
  6. 6While the stew is simmering, slice the 8 ounces of vegan chorizo sausage into rounds, about 1/4-inch thick. During the last 30 minutes of the stew's cooking time, add the sliced vegan chorizo to the pot. Stir to combine.
  7. 7Before serving, carefully remove and discard the 2 bay leaves from the stew. Stir in the 0.25 cup of fresh cilantro, which has been chopped. Serve the Vegan Portuguese Bean Stew hot.
