Ingredients

  • 4 medium Potatoes, peeled and grated
  • 1 small Onion, grated
  • 2 tablespoons Potato Starch
  • 1 tablespoon Tapioca Starch
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 cup Vegan Applesauce
  • 1/4 cup Vegetable Oil

Instructions

  1. 1Grate the potatoes and onion using a box grater or food processor.
  2. 2Place the grated potatoes and onion in a cheesecloth or clean kitchen towel and squeeze out as much liquid as possible. This will help the pancakes crisp up.
  3. 3In a large bowl, combine the squeezed potato and onion mixture with potato starch, tapioca starch, salt, and pepper. Mix well.
  4. 4Heat vegetable oil in a large skillet over medium-high heat.
  5. 5Drop spoonfuls of the potato mixture into the hot oil, forming small pancakes. Do not overcrowd the pan.
  6. 6Fry for 3-4 minutes per side, or until golden brown and crispy.
  7. 7Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. 8Serve immediately with vegan applesauce or vegan sour cream alternative.
