Ingredients

  • 2 pounds Potatoes
  • 1 medium Onion
  • 0.5 cup All-purpose flour
  • 2 tablespoons Potato starch
  • 1 cup Vegan sour cream (or applesauce)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Vegetable oil

Instructions

  1. 1Peel and grate potatoes and onion using a box grater or food processor.
  2. 2Place the grated potato and onion in a cheesecloth or clean kitchen towel and squeeze out as much liquid as possible.
  3. 3In a bowl, combine the squeezed potato mixture, flour, potato starch, salt, and pepper. Mix well.
  4. 4Heat vegetable oil in a large skillet over medium heat.
  5. 5Drop spoonfuls of the potato mixture into the hot oil, flattening slightly to form pancakes.
  6. 6Fry for 3-4 minutes per side, or until golden brown and crispy.
  7. 7Serve hot with vegan sour cream or apple sauce.
