Vegan Polish Cabbage Soup (Kapuśniak)

Ingredients

  • 2 cups Sauerkraut
  • 1 medium Cabbage
  • 2 medium Potatoes
  • 1 medium Carrot
  • 1 medium Onion
  • 6 cups Vegetable broth
  • 0.5 cup Dried mushrooms
  • 2 leaves Bay leaf
  • 4 berries Allspice berries
  • 1 cup Vegan sausage
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Soak dried mushrooms in hot water for 30 minutes.
  2. 2Chop cabbage, potatoes, carrot, and onion.
  3. 3In a large pot, sauté onion and carrot until softened.
  4. 4Add sauerkraut, cabbage, potatoes, soaked mushrooms (drained and chopped), vegetable broth, bay leaf, and allspice berries.
  5. 5Bring to a boil, then reduce heat and simmer for 30 minutes, or until vegetables are tender.
  6. 6Add chopped vegan sausage and cook for another 10 minutes.
  7. 7Season with salt and pepper to taste. Remove bay leaves and allspice berries before serving.
