Vegan Placek Ziemniaczany z Gulaszem (Potato Pancake with Goulash)

Ingredients

  • 3 lbs Potatoes
  • 1 large Onion
  • 1/2 cup All-purpose flour
  • 2 tbsp Potato starch
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 lb Mushrooms
  • 2 medium Bell peppers
  • 2 cups Vegetable broth
  • 2 tbsp Tomato paste
  • 1 tsp Smoked paprika
  • 1/2 cup Olive oil

Instructions

  1. 1Peel the 3 lbs of potatoes and the 1 large onion. Using a box grater or food processor, grate the potatoes and onion. Place the grated mixture in a clean kitchen towel and twist tightly to squeeze out as much liquid as possible.
  2. 2In a large bowl, combine the squeezed potatoes and onion with the 1/2 cup of all-purpose flour, 2 tbsp of potato starch, 1 tsp of salt, and 1/2 tsp of black pepper. Mix well until everything is evenly incorporated.
  3. 3Heat 1/4 cup of the 1/2 cup of olive oil in a 12-inch non-stick skillet over medium-high heat (400°F / 200°C). Once the oil is shimmering, carefully pour the potato mixture into the hot skillet. Spread it evenly to form one large pancake.
  4. 4Cook the potato pancake for 10-15 minutes on the first side, until the bottom is deeply golden brown and crispy. Carefully flip the pancake using a large spatula and cook for another 10-15 minutes on the second side, until it is also golden brown and cooked through.
  5. 5While the pancake is cooking, prepare the goulash. Wipe out the skillet if needed, and add the remaining 1/4 cup of olive oil over medium-high heat (400°F / 200°C). Add the 1 lb of mushrooms and the 2 medium bell peppers, cut into bite-sized pieces. Sauté for 5-7 minutes, until the vegetables have softened.
  6. 6Stir in the 2 cups of vegetable broth, 2 tbsp of tomato paste, and 1 tsp of smoked paprika. Bring the mixture to a simmer and cook for 15 minutes, stirring occasionally, until the sauce has thickened to your desired consistency.
  7. 7Once the potato pancake is golden brown and crispy on both sides, carefully slide it onto a cutting board. Slice the pancake into wedges. Serve the wedges topped with the prepared vegan goulash.
