Vegan Pierogi with Potato and Onion Filling

Classic Polish dumplings made vegan with a potato and onion filling. These pierogi are delicious boiled or pan-fried.

Ingredients

  • 3 cups All-purpose flour
  • 1 cup Warm water
  • 1/2 teaspoon Salt
  • 2 pounds Potatoes
  • 1 large Onion
  • 1/4 cup Vegan butter
  • 1/4 teaspoon Black pepper
  • 1 cup Vegan sour cream

Instructions

  1. 1Prepare the dough: In a large bowl, combine flour, warm water, and salt. Knead until a smooth dough forms. Let rest for 30 minutes.
  2. 2Prepare the filling: Boil potatoes until tender. Mash. In a pan, sauté onion in vegan butter until golden. Add to mashed potatoes.
  3. 3Season the filling with salt and pepper.
  4. 4Roll out the dough thinly and cut into circles. Place a spoonful of filling in the center of each circle.
  5. 5Fold the dough over the filling and crimp the edges to seal.
  6. 6Boil the pierogi in salted water until they float to the surface, about 3-5 minutes.
  7. 7Serve with vegan sour cream.
