Vegan Phapar Roti (Buckwheat Pancakes)

Instructions

  1. 1In a medium-sized mixing bowl, combine the 1 cup of buckwheat flour, the 1 cup of water, and the 1/4 teaspoon of salt. Whisk these ingredients together until a smooth batter forms, ensuring there are no lumps.
  2. 2Place a 10-inch or 12-inch frying pan or griddle over medium heat on your stovetop. Add 1/2 teaspoon of the 1 tablespoon of oil to the pan and spread it evenly across the cooking surface. Heat the pan for 1 to 2 minutes until the oil shimmers slightly, indicating it has reached a temperature of approximately 350°F (175°C).
  3. 3Pour 1/4 cup of the prepared batter onto the hot pan for each pancake. Cook for 2 to 3 minutes, or until small bubbles appear on the surface of the pancake and the edges look set and slightly dry.
  4. 4Carefully slide a spatula under each pancake and flip it over. Cook the second side for another 2 to 3 minutes, or until it is golden brown and cooked through in the center. Transfer the cooked pancakes to a plate.
  5. 5If needed, add another 1/2 teaspoon of the 1 tablespoon of oil to the pan before pouring more batter, and repeat steps 3 and 4 until all the batter is used. Serve the vegan phapar roti warm, perhaps with maple syrup or fresh fruit.
