Vegan Pastel de Nata Bites

Miniature vegan versions of Portugal's famous custard tarts. Crispy puff pastry filled with a creamy, cinnamon-infused custard. Perfect for a sweet snack.

Ingredients

  • 1 sheet Vegan Puff Pastry
  • 1 cup Plant-based Milk (e.g., oat or soy)
  • 2 tbsp Vegan Egg Yolk Replacer
  • 1/2 cup Sugar
  • 2 tbsp Cornstarch
  • 1 tsp Vanilla Extract
  • 1 small Cinnamon Stick
  • 1 strip Lemon Peel
  • 1 tbsp Powdered Sugar

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2In a saucepan, combine plant-based milk, sugar, cornstarch, and vegan egg yolk replacer.
  3. 3Add cinnamon stick and lemon peel to the saucepan.
  4. 4Cook over medium heat, stirring constantly, until the vegan custard thickens.
  5. 5Remove from heat and stir in vanilla extract. Remove the cinnamon stick and lemon peel.
  6. 6Roll out the vegan puff pastry and cut into small circles.
  7. 7Press the pastry circles into mini muffin tins.
  8. 8Fill each pastry cup with the dairy-free custard mixture.
  9. 9Bake for 20-25 minutes, or until the pastry is golden brown and the vegan custard is slightly browned on top.
  10. 10Let cool slightly before removing from the muffin tins.
  11. 11Dust with powdered sugar before serving.
