Ingredients

  • 1 package (14 oz) Extra-Firm Tofu
  • 1 medium Onion
  • 3 cloves Garlic
  • 3 tablespoons Sweet Paprika
  • 1 teaspoon Smoked Paprika
  • 1 cup Vegetable Broth
  • 1 can (13.5 oz) Full-Fat Coconut Milk
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 medium head Cauliflower
  • 1/4 cup Potato Starch
  • 2 tablespoons Nutritional Yeast

Instructions

  1. 1Press the 1 package (14 oz) of extra-firm tofu for 15-20 minutes to remove excess water, then cut it into 1-inch cubes. Dice the 1 medium onion into 1/4-inch pieces and mince the 3 cloves of garlic.
  2. 2Grate the 1 medium head of raw cauliflower using a cheese grater or food processor. In a medium bowl, combine the grated cauliflower with 1/4 cup potato starch, 2 tablespoons nutritional yeast, 1 teaspoon salt, and 1/2 teaspoon black pepper, then mix well and form into 1-inch diameter dumplings.
  3. 3Heat a large 12-inch non-stick pan or cast-iron skillet over medium heat (325-350°F / 160-175°C). Add 2 tablespoons olive oil, then pan-fry the 1-inch tofu cubes for 8-10 minutes, turning occasionally, until golden brown and crispy on all sides; remove and set aside.
  4. 4In the same pan over medium heat (325-350°F / 160-175°C), cook the diced 1 medium onion for 5-7 minutes until softened and translucent, then add the minced 3 cloves of garlic and cook for 1 minute more until fragrant. Stir in 3 tablespoons sweet paprika and 1 teaspoon smoked paprika, cooking for 30 seconds until aromatic.
  5. 5Pour in 1 cup vegetable broth and 1 can (13.5 oz) full-fat coconut milk, stirring to combine and bringing the sauce to a gentle simmer over medium heat (190-200°F / 88-93°C). Carefully drop the 1-inch cauliflower dumplings into the simmering sauce and cook for 5-7 minutes until they float to the top and appear slightly puffed and cooked through.
  6. 6Return the cooked tofu cubes to the pan, stirring gently to combine and heat through for 1-2 minutes. Stir in 1 tablespoon lemon juice and serve the dish hot.
