Vegan Paprikash with Potato Dumplings

Ingredients

  • 1 lb Potatoes, peeled and cubed
  • 1/4 cup Tapioca Starch
  • 1/2 tsp Salt
  • 2 tbsp Vegan Butter
  • 1 medium Onion, chopped
  • 1 medium Bell Pepper, sliced
  • 8 oz Cremini Mushrooms, sliced
  • 2 tbsp Sweet Paprika
  • 1 tsp Smoked Paprika
  • 2 cups Vegetable Broth
  • 1 can Full-Fat Coconut Milk
  • 2 tbsp Tomato Paste
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Prepare the potato dumplings: Place the 1 lb of Potatoes, peeled and cubed, into a medium pot and cover with water. Bring to a boil over high heat, then reduce heat to medium and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes well and return them to the pot. Mash the potatoes thoroughly until smooth. Add the 1/4 cup Tapioca Starch and the 1/2 tsp Salt to the mashed potatoes and mix until a cohesive dough forms. Roll the dough into small, bite-sized dumplings, about 1 inch in diameter.
  2. 2In a large, heavy-bottomed pot or Dutch oven, melt the 2 tbsp Vegan Butter over medium heat (350°F / 175°C). Add the 1 medium Onion, chopped, and the 1 medium Bell Pepper, sliced. Cook, stirring occasionally, for 5-7 minutes, or until the onion is translucent and the pepper is softened.
  3. 3Add the 8 oz Cremini Mushrooms, sliced, to the pot. Cook, stirring occasionally, for 5-8 minutes, or until the mushrooms have released their liquid and started to brown.
  4. 4Stir in the 2 tbsp Sweet Paprika and the 1 tsp Smoked Paprika. Cook for 1 minute, stirring constantly, until fragrant.
  5. 5Pour in the 2 cups Vegetable Broth and the 1 can Full-Fat Coconut Milk. Stir in the 2 tbsp Tomato Paste. Bring the mixture to a gentle simmer over medium heat (350°F / 175°C).
  6. 6Carefully drop the prepared potato dumplings into the simmering sauce, ensuring they are mostly submerged. Reduce the heat to medium-low (300°F / 150°C) and cook for 15-20 minutes, or until the dumplings are firm to the touch and have floated to the surface. The sauce should have thickened slightly.
  7. 7Stir in the 1 tsp Salt and the 1/2 tsp Black Pepper. Taste and add more salt or pepper if desired. Serve the Vegan Paprikash hot.
