Vegan Pancit Bihon

Ingredients

  • 8 oz Bihon (rice noodles)
  • 1 cup Carrots
  • 1 cup Cabbage
  • 1 medium Bell pepper (any color)
  • 1/2 cup Snap peas
  • 1 medium Onion
  • 3 cloves Garlic
  • 1/4 cup Soy sauce (gluten-free)
  • 1 cup Vegetable broth
  • 2 tbsp Coconut oil
  • 1/4 tsp Black pepper

Instructions

  1. 1Soak the rice noodles in hot water until softened (about 10 minutes). Drain and set aside.
  2. 2Heat the coconut oil in a large pan or wok. Sauté the onion and garlic until fragrant.
  3. 3Add the carrots, cabbage, and bell pepper. Cook until slightly softened (about 5 minutes).
  4. 4Add the snap peas and drained gluten-free noodles to the pan. Stir-fry for 2-3 minutes.
  5. 5Pour in the tamari and vegetable broth. Stir until well combined.
  6. 6Season with black pepper to taste. Cook until the rice noodles are tender and the sauce has thickened (about 5 minutes).
  7. 7Serve hot.
