  • 8 slices Bread (Challah or Brioche style)
  • 1 cup Canned Coconut Milk (full-fat)
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1 pinch Pinch of Salt
  • 2 tablespoons Vegan Butter
  • optional Powdered Sugar (for dusting)

Instructions

  1. 1In a shallow dish, whisk together coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
  2. 2Heat a lightly oiled pan or griddle over medium heat.
  3. 3Dip each slice of bread into the coconut milk mixture, soaking for about 15-20 seconds per side.
  4. 4Melt vegan butter in the hot pan.
  5. 5Cook soaked bread slices for 2-3 minutes per side, or until golden brown and cooked through.
