Vegan Pad See Ew with Tofu

Ingredients

  • 1 lb Wide Rice Noodles
  • 14 oz Firm Tofu
  • 2 cups Broccoli Florets
  • 1 bunch Chinese Broccoli (Gai Lan)
  • 4 cloves Garlic
  • 2 tbsp Dark Soy Sauce
  • 2 tbsp Soy Sauce
  • 2 tbsp Vegan Oyster Sauce
  • 1 tbsp Brown Sugar
  • 1 tsp Rice Vinegar
  • 2 tbsp Vegetable Oil

Instructions

  1. 1Place the 14 oz firm tofu on a clean kitchen towel. Cover it with another clean kitchen towel and place a heavy object, such as a cutting board with cans, on top. Press the tofu for at least 15 minutes to remove excess water. After pressing, cut the 14 oz firm tofu into 1-inch cubes.
  2. 2Place the 1 lb wide rice noodles in a large heatproof bowl. Pour enough very hot tap water over the noodles to fully submerge them. Let the noodles soak for 10-15 minutes, or until they are pliable but still have a slight chew and are not mushy. Drain the noodles well and set aside.
  3. 3Heat 1 tbsp of the 2 tbsp vegetable oil in a large wok or skillet over medium-high heat (about 400°F / 200°C). Add the 1-inch cubes of tofu and stir-fry for 5-7 minutes, turning occasionally, until they are golden brown and slightly crispy on all sides. Remove the cooked tofu from the wok and set it aside.
  4. 4Add the remaining 1 tbsp of the 2 tbsp vegetable oil to the same large wok or skillet over medium-high heat (about 400°F / 200°C). Add the 4 cloves of minced garlic and stir-fry for 30 seconds, until you can smell its fragrance. Add the 2 cups of broccoli florets and the 1 bunch of Chinese broccoli, cut into bite-sized pieces, and stir-fry for 3-5 minutes, until the vegetables are bright green, slightly softened, and tender-crisp.
  5. 5In a small bowl, whisk together the 2 tbsp dark soy sauce, 2 tbsp soy sauce, 2 tbsp vegan oyster sauce, 1 tbsp brown sugar, and 1 tsp rice vinegar until the brown sugar is completely dissolved and the sauce is well combined.
  6. 6Add the prepared 1 lb wide rice noodles and the cooked 1-inch cubes of tofu back into the wok with the vegetables. Pour the prepared sauce over everything. Using tongs or two spatulas, gently but thoroughly toss the ingredients for 2-3 minutes, ensuring the noodles, tofu, and vegetables are evenly coated with the sauce and everything is heated through.
  7. 7Serve the Vegan Pad See Ew immediately while hot.
