Vegan Nasi Goreng (Fried Rice)

Ingredients

  • 4 cups Cooked White Rice (day-old)
  • 2 tablespoons Coconut Oil
  • 4 cloves Garlic
  • 2 medium Shallots
  • 1 small Red Chili
  • 1/2 cup Carrot
  • 1/2 cup Green Beans
  • 1/2 cup Bell Pepper
  • 3 tablespoons Coconut Aminos
  • 1 teaspoon Maple Syrup
  • 1 tablespoon Lime Juice
  • 1/2 teaspoon Turmeric Powder
  • to taste Salt
  • to taste Black Pepper
  • 2 tablespoons Fresh Cilantro

Instructions

  1. 1Heat coconut oil in a large wok or skillet over medium-high heat.
  2. 2Add minced garlic, shallots, and chili. Sauté until fragrant, about 1 minute.
  3. 3Add diced carrot, green beans, and bell pepper. Cook until slightly softened, about 3 minutes.
  4. 4Add cooked rice and break it up with a spatula.
  5. 5Pour in coconut aminos, maple syrup, and lime juice. Stir well to combine.
  6. 6Season with turmeric powder, salt, and pepper to taste.
  7. 7Cook, stirring occasionally, until the rice is heated through and slightly crispy, about 5-7 minutes.
  8. 8Garnish with fresh cilantro before serving.
