Vegan Migas Gatas (Bread Soup)

A traditional Portuguese bread soup, adapted to be vegan. Stale bread is simmered in a garlic-infused vegetable broth and flavored with spices for a comforting and frugal meal.

Ingredients

  • 3 tablespoons Olive Oil
  • 4 cloves Garlic
  • 8 cups Stale Bread
  • 6 cups Vegetable Broth
  • 1 teaspoon Smoked Paprika
  • 0.5 teaspoon Cumin
  • 0.75 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 0.25 cup Fresh Cilantro

Instructions

  1. 1Heat the olive oil in a large pot over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  2. 2Add the cubed stale bread and toast it lightly in the oil for 3-4 minutes, stirring occasionally.
  3. 3Pour in the vegetable broth, and add smoked paprika, cumin, salt, and pepper. Bring to a simmer.
  4. 4Reduce the heat to low and simmer for 15-20 minutes, or until the bread has softened and absorbed the broth. Stir occasionally to prevent sticking.
  5. 5Taste and adjust seasoning as needed. Garnish with fresh cilantro before serving.
