Vegan Maluns

A traditional Swiss dish from the Grisons region, these vegan Maluns are made with boiled potatoes, flour, and plant-based butter, resulting in crispy, flavorful potato dumplings.

Ingredients

  • 2 lb Russet Potatoes
  • 1 cup All-Purpose Flour
  • 4 tablespoons Vegan Butter
  • 1 teaspoon Salt
  • 1/4 teaspoon Nutmeg
  • 1 cup Applesauce

Instructions

  1. 1Place the 2 lb Russet Potatoes in a large heavy-bottomed pot and cover with cold water. Bring to a boil over high heat and cook until the potatoes are tender when pierced with a fork, about 20-30 minutes. Drain the potatoes and let them cool slightly until you can handle them. While still warm, peel the potatoes and mash them coarsely in a large bowl.
  2. 2Add the 1 cup All-Purpose Flour, 1 teaspoon Salt, and 1/4 teaspoon Nutmeg to the mashed potatoes. Mix everything together with your hands or a sturdy spoon until a cohesive dough forms.
  3. 3Place a 12-inch skillet over medium heat. Add the 4 tablespoons Vegan Butter to the skillet and let it melt completely.
  4. 4Take about 2 tablespoons of the potato dough at a time and either roll it into small, rustic dumplings or simply crumble it directly into the hot skillet with the melted vegan butter.
  5. 5Cook the Maluns in the skillet, stirring and turning them occasionally with a spatula, for 15-20 minutes. Continue cooking until they are golden brown and crispy on all sides. You will see them develop a nice crust.
  6. 6Serve the hot Maluns immediately with the 1 cup Applesauce on the side.
