Ingredients

  • 20 Rice Paper Wrappers
  • 1/2 cup Carrots (finely chopped)
  • 1/2 cup Jicama (finely chopped)
  • 1/2 cup Green Beans (finely chopped)
  • 7 oz Tofu (crumbled)
  • 1/4 cup Onion (minced)
  • 2 cloves Garlic (minced)
  • 2 tbsp Coconut Aminos
  • 1 tsp Sesame Oil
  • 1 tbsp Sweet Potato Starch
  • 2 tbsp Rice Vinegar
  • 1/2 tsp Red Chili Flakes
  • 2 tbsp Agave Nectar

Instructions

  1. 1In a medium bowl, combine the 1/2 cup of finely chopped carrots, 1/2 cup of finely chopped jicama, 1/2 cup of finely chopped green beans, 7 oz of crumbled tofu, 1/4 cup of minced onion, 2 cloves of minced garlic, 2 tablespoons of coconut aminos, 1 teaspoon of sesame oil, and 1 tablespoon of sweet potato starch. Mix thoroughly until all ingredients are evenly distributed to create the filling.
  2. 2Fill a shallow dish or a wide bowl with warm water. Dip one of the 20 rice paper wrappers into the warm water for 15-20 seconds, or until it becomes soft and pliable, then carefully lay it flat on a clean, dry surface.
  3. 3Place 1 to 1.5 tablespoons of the prepared vegetable mixture near one edge of the softened rice paper wrapper. Fold the bottom edge of the wrapper over the filling, then fold in both side edges towards the center, and finally roll the wrapper tightly from the bottom up to create a compact spring roll. Repeat this process for all 20 rice paper wrappers and the remaining filling.
  4. 4Heat enough oil to reach 1-2 inches depth in a 10-inch or 12-inch skillet over medium heat to a temperature of 350°F (175°C). Carefully place 3-4 of the rolled lumpia into the hot oil, ensuring not to overcrowd the skillet, and fry for 3-5 minutes, turning occasionally, until they are golden brown and crispy on all sides. Remove the fried lumpia and place them on a wire rack or paper towels to drain excess oil.
  5. 5In a small bowl, combine the 2 tablespoons of rice vinegar, 1/2 teaspoon of red chili flakes, and 2 tablespoons of agave nectar. Whisk until the ingredients are well blended to create the sweet chili dip.
  6. 6Serve the hot, crispy lumpia immediately with the prepared sweet chili dip on the side.
