Ingredients

  • 1 cup Brown or Green Lentils
  • 6 cups Vegetable Broth
  • 1 cup Carrots
  • 1/2 cup Celery
  • 1 cup Onion
  • 1 tsp Smoked Paprika
  • 1 Bay Leaf
  • 1/2 tsp Dried Marjoram
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. 2Add lentils, vegetable broth, smoked paprika, bay leaf, marjoram, salt, and pepper.
  3. 3Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  4. 4Remove bay leaf before serving.
